Purpose of the Position:

In conjunction with the DSU Dining Operations Manager, the incumbent has responsibility for cash and card sales in retail dining in the Student Union. Incumbent will assist in the responsibility for reviewing, monitoring, interpreting, analyzing, evaluation and comparing data to: improve and control food cost; lower labor cost; increase sales volume over projections, identify and respond to customer trends and design effective marketing for all operations. Incumbent will be solely responsible for monthly inventory and tracking of labor cost for all locations.

Knowledge, Skills, Abilities (KSA's) and/or Competencies required and preferred:

Required:

Must have a comprehensive background in food preparation and quantity food production in retail operations.

An understanding of purchasing, scheduling, human resource management, health codes, OSHA requirements, food cost analysis, retail sales and related issues, inventory management, menu development/costing products and understanding of food science.

Knowledge of recipes and costing products for retail sales.

Ability to communicate in writing or verbally to both supervisors and subordinates.

Ability to adjust to cyclic environment.

Ability to be accurate despite repetitious detail work. Knowledge of all cooking methods and kitchen equipment.

Cash handling skills.

Ability to be accurate despite repetitious detail work.

Demonstrated skill in the use of personal computers and associated software.

Must be able to work under pressure of time restraints and deadlines.

Ability to adjust to cyclic environment.

Must be available for nights and weekends.

Introductory understanding of accounting/bookkeeping principles.

Preferred:

Knowledge of MS Word and Excel

Education, Experience, Licensure, Certification Required :

Required Education:

High school diploma or equivalent.

Required Experience:

Sufficient retail management experience in deli/pastry-bakery/chain/fast food operations/large production kitchen.

Experience working with the public.

Experience in cash service required.

Education, Experience, Licensure, Certification Preferred :

Preferred Education:

Business and word processing courses preferred.

ServSafe certificate.

Preferred Experience:

Previous experience working at a college/university.

Previous front of the house catering/banquet experience.

Previous experience with chain restaurants, such as Chick-fil-A.
