GENERAL MANAGER, DINING SERVICES

Salary Range: $68,000 - $72,000 /year

 

Under direction of the Food Service Coordinator, the General Manager is independently responsible for the operation of a Housing, Dining, Hospitality dining unit, retail sales facility, catering operation, functional area of a larger operation and/or food truck. This includes organizing, planning, budget and financial management, staffing, training, computerized systems, equipment and inventory maintenance and security. The incumbent is responsible for innovative leadership and providing a climate of growth for both facility and staff.

 

Provides direct supervision typically to professionals or skilled technical employees. Functions as adviser to unit and administration. Analyzes and resolves problems, interprets policies (e.g., fiscal management, HR, contracts and grants, resource management in defined areas) and demonstrates solid subject matter knowledge. Exercises judgment within defined procedures and policies to determine appropriate action. Supervises staff to assure accountability and stewardship of department resources (operational, financial, and human) in compliance with departmental goals and objectives.

 

Receives assignments in the form of objectives with goals and the process by which to meet goals. Provides direction to employees according to established policies and management guidance. Administers policies that directly affect subordinate employees. Recommends changes to unit or sub-unit policies and practices. Identifies risks and responds accordingly. Management reviews work to measure meeting of objectives. May assist with departmental training initiatives across campus.

 

Housing Dining Hospitality (HDH) is a self-funded, large and complex campus department consisting of 7 divisions, with over 700 career employees, 1000 to 1200 student employees and an annual operating budget greater than $200 million. HDH provides housing for approximately 18,000 undergraduates, grad students, faculty, staff and their families in over 400 buildings covering over 8 million sq. ft. HDH is in the midst of implementing an aggressive building plan which added 10,000 new beds in the next 10 years and will almost double our square footage by 2032.

 

Currently, HDH houses 38% of UCSD’s enrolled students with a goal of housing 65% by 2032. HDH provides maintenance and repair, contract meals/meal plan management, as well as retail food service, conference services and catering services to residents, students, faculty, staff, and campus visitors.

QUALIFICATIONS

• Solid knowledge in food service and sanitation regulations. Dining services management (typically 2 years min) experience in varied background and independent decision making responsibility. Skill and knowledge of preparing and presenting quantity and quality food production.

• Proven knowledge of dining services budget management. To develop and implement methods to control cash, food and labor costs, retail prices, inventory, and equipment.

• Skill in personnel management including knowledge and skill of evaluating, communicating in an effective, straightforward manner, thereby creating a positive climate for maximum employee productivity, growth and development.

• Proficient computer application skills to include food service applications such as point of sale and inventory control software. This includes forecasting of inventory, production, recipe file, access control, time and attendance.

• Strong verbal and written communication in the English language, including active listening, dynamic flexibility, and critical thinking, and ability to multi-task and ensure effective time management.

• Solid decision making and reasoning skills, and ability to develop original ideas to solve problems, and perform operations analysis and quality control analysis.

• Effective interpersonal and work supervision skills to provide guidance to other personnel and work effectively with partners on joint projects.

• Excellent mathematical and cash control skills to accurately complete drawer counts and prepare deposits.
