In early 2021, UNT will open its first standalone Dining Hall, Eagle Landing, inspired by urban food halls and home to seven unique restaurant concepts, all available for a single Meal Plan swipe. Position Overview:

The Registered Dietitian will provide nutritional education and training support to the campus community including the dining services associates and managers, athletic teams, and the general community. This role will continue to support the university sports nutrition department and their student-athletes. Sessions may be formatted as lunch and learn sessions, cafe promotions, workshops, and foodservice in-service training. Will also serve as a student advocate and contact point for food allergy-related issues.

Minimum Qualifications:

Bachelor’s Degree in Nutrition or related field and one year related experience.

Knowledge, Skills and Abilities:


Preferred Qualifications:

The preferred candidate will possess the following additional qualifications:

  • A minimum of one years’ experience working with collegiate athletes at the NCAA division one level.
  • Master’s degree in sports nutrition or exercise science/physiology.

Required License / Registration / Certification:

A current Registered Dietitian with the Accreditation Council for Education in Nutrition and Dietetics (ACEND). Licensure through the State of Texas upon hire.

Board Certified Specialist in Sports Dietetics (CSSD) or Certified Sports Nutritionist (CISSN) preferred.

Work Schedule:

Hours of Operation: 8 AM-5 PM. Hours may vary, weekends, and overtime as necessary.

Ability to communicate


Oversee assigned athletics teams to ensure suitable nutrition presence, provisions and growth.


Continue to expand upon sports nutrition knowledge. Translating the latest scientific evidence into practical sports nutrition recommendations for student athletes.


Establish and maintain knowledge of and compliance with, specific NCAA, Conference USA, and institution rules that relate to this position.


Identifies campus specific projects in coordination with advocates from both campus and dining services Plans and implements both corporate and customized nutrition and wellness programming for the campus community.


Develops and revises patient education materials, clinical forms and nutrition protocols to suit the needs of students.


Counsel and consult with student on nutrition to support both health and performance.


Leads allergen identification and labeling process for campus dining operations.


Serve as nutrition resource for all dining services employess to guide best practices and ensure nutrition needs of student body are met.


Serve as part of the MCURC initiative and serve as the university’s nutrition representative and subject matter expert.


Work towards establishing culinary workshops or demonstrations for student athletes.
