Description
Under the general supervision of the Executive Director of Auxiliary Services and working in conjunction with the Director of the University Center and the Directors of Residential Life and Housing, this position is responsible for the oversite of the campus self-operated Department of Dining and Hospitality Services for the University of Colorado Colorado Springs.  Dining and Hospitality Services is a unit within the division of Student Affairs.

In accordance with applicable laws, and State and University policies/procedures, the Director of UCCS Dining and Hospitality Services oversees the dining management staff; planning of menus; purchasing, storage and serving of food; maintenance of proper standards of sanitation, food handling, and safety; short and long range planning for equipment and facility needs; hiring, training and evaluation of all dining service employees; and customer service standards in all areas.  The Director develops and administers operating budgets and provides required financial reports; maintains positive working relations with employees, customers and university staff; and works closely with academic areas on joint endeavors and the provision of opportunities for class related experiences.  The Director must be committed to student employment and professional development opportunities for both students and staff.

The University of Colorado Colorado Springs campus has two residential dining facilities (the Lodge and The Roaring Fork) serving approximately 1700 first year students or 1200 meals daily.  The retail operation includes; one full service retail cafeteria (Café 65) with multiple food platforms; one pub/grill (Clyde’s) and a Coffee Shop (Sanitorium Grounds) located in the University Center, The Hybl Café, a quick service café serving healthy, sustainable foods with a focus on sports nutrition, and four additional coffee shops located in various academic buildings on campus.  The retail components serve approximately 1500 diners daily.  The full service catering operation serves over 1000 events a year ranging from small events of 10 people to large formal sit-down banquets of up to 500.  Annual gross operating revenues for FY 2022 are projected to be in excess of $7 Million   More information about UCCS Dining Services may be found at www.uccs.edu/diningservices.

Job Duties:

  • Establish missions, vision, goals, and objectives for the department.
  • Establish and administer policies and procedures for the department.
  • Ensure proper administration and use of Menu Management System, Point of Sale software and any other computerized management systems of UCCS Dining Services.
  • Oversee equipment and facility needs and develop short and long-term capital planning.
  • Ensure proper administration of UCCS and University of Colorado Human Resources policies.
  • Develop and administer operating budget, monitor costs and revenues, and implement industry standard financial reporting systems. 
  • Supervise the recruitment, selection, training, discipline, evaluation and professional development of UCCS Dining staff.
  • Ensure a properly functioning student employment program, utilizing student managers and work study student employees.
  • Supervise the food purchasing, production, distribution and service in all UCCS Dining and Hospitality Services areas.
  • Develop, define, and implement dining programs and/or operations which appeal to a broad base of customers.
  • Ensure financial responsibility and efficiencies in operations are an on-going priority.
  • Assist in the administration and oversite of the Colorado State Liquor Licensing Act and the UCCS Alcohol Policy.
  • Develop annual promotions and marketing plans (including a strong social media presence),and oversee implementation in partnership with University Communications.
  • Ensure a safe and sanitary workplace based on local, state and federal guidelines.
  • Incorporate best practices in sustainability where appropriate in coordination with the Office of Sustainability and Auxiliary Facilities.  Be an active participant in contributing to a sustainable campus and sustainable food service department.
  • Be an active participant in professional organizations related to food service, stay abreast of industry trends, and ensure UCCS Dining and Hospitality Services stays on the leading edge of change in the industry.
  • Develop collaborative relationships with other entities in Administration and Finance as well as Academic Affairs and Student Affairs to further the success of individual and joint goals.
  • May be expected to work various shifts to include nights, weekends, and holidays.
  • Position may be assigned as “Essential Services Designation” – meaning required to report without delay or interruption to provide essential or emergency services to ensure health, safety, and welfare.
  • Develop a Food Service Advisory Committee composed of faculty, staff and students to solicit feedback regarding products, menus, operations, and policies.
  • Survey and analyze student attitudes and opinions regarding UCCS Dining and Hospitality Services.
  • Survey and analyze faculty/staff and catering clientele regarding UCCS Dining and Hospitality Services.
  • Implement and encourage the use of a suggestion system designed to be responsive to student and faculty/staff needs.
  • Implement special events and programs to meet customer needs, desires, and preferences.
  • Be available and visible to individual diners/customers in an on-going capacity.
  • Work cooperatively with internal customers and departments to provide assistance in achieving goals and objectives of the division.
  • Develop a special events calendar for dining that supports the UCCS mission of Diversity, Equity and Inclusion in diner engagement.
  • Support and enhance the University’s commitment to a supportive campus environment.
  • Provide opportunities for student learning experiences related to academic studies, including but not limited to: food service, dietetics, sustainability, business administration, and marketing.
  • Provide an open and welcoming customer service philosophy with employees, alumni, university staff, and community members.
  • Serve on University-wide committees and task forces as requested.

  • This position has been determined to be exempt from the overtime provisions of the Fair Labor Standards Act (FLSA).

    What We Offer:

    Salary Range: Generally starting at $66,566 - $84,896

    The salary of the finalist(s) selected for this role will be set based on a variety of factors, including but not limited to, internal equity, experience, education, specialty and training.

    This position is dependent on the availability of auxiliary revenues funding.

    Qualifications
    Minimum Qualifications:

  • Bachelor’s degree in Food Service Management, Dietetics, Hospitality, Culinary Arts, Business Management or a related field.
  • 7+ years of progressive management experience in a complex multi-unit food service operation with gross revenues in excess of $4M annually with 4 years in a supervisory capacity.
  • 4+ years of personnel management experience with recruitment, hiring, evaluation, compensation, time management, training, safety programs, laws, regulations and policies for both professional and student employees.
  • 4+ years food service operations management experience in menu development, technology information systems (POS, On-Line Scheduling, Food and Inventory Management System, Card Systems, on-line procurement), equipment procurement, maintenance and repair, policy and procedure development.
  • Current Servsafe and Tips certification or ability to become certified within 3 months of employment.
  • Preferred Qualifications:

  • Master’s degree in Food Service Management, Dietetics, Hospitality, Culinary Arts, Business Management, MBA, or a related field.
  • 10+ years of progressive management experience in a complex self-operated food service operation.
  • 4+ years Food Service management experience in a college or university setting.
  • Demonstrated knowledge of food service sustainability practices.
  • Knowledge of CBORD.
  • Physical Requirements:

    While performing the duties of this job, the employee is frequently required to move.  Employee is occasionally required to have long periods of sitting, moderate bending, moderate energy requirements, reaching, handling, fingering, and fine motor skills.  Smelling/Tasting within normal range.  The employee must occasionally lift and/or move up to 50 pounds and must frequently lift and/or move up to 20 pounds.
