This is a hands-on culinary position that provides extensive oversight, leadership and input in the University of Colorado Athletics Fueling Program. Under the supervision of the Executive Chef, this role provides input for new and existing products/menus/recipes and performs research and development to ensure accuracy of ingredients, methodology, yield, authenticity and quality. Additionally, this position executes standardized recipe preparation, ensuring quality, nutrition, allergen and food safety guidelines are followed. The Sous Chef leads the work of others in the kitchen, including cooks, dishwashers and supports front of house staff. Provides excellent customer service in a team oriented and supported environment.
This position is responsible for promoting the philosophy and objectives of the intercollegiate athletics program. This shall include adhering to the principles of the Athletic Department’s Mission Statement, Diversity and Inclusion Mission Statement, Core Values, Policies and Procedures, as well as the rules and regulations of the University, the Pac 12 Conference and the NCAA.

What Your Key Responsibilities Will BeKitchen Preparation & Operation:
- Execute menus and standardized recipes for compliance as required to make sure food allergen and nutrition guidelines are followed.
- Preps, assembles and delegates food preparation tasks, and makes decisions based on product outages and menu changes.
- Understands and utilizes all production equipment.
- Places work orders as needed.
- Assists with ordering and receiving of products.
- Puts away food orders and maintains clean and organized storage areas.
- Maintains a ServSafe Certification.
- Ensure all temperatures, storage and allergen labeling procedures are followed and takes corrective action when out of compliance, including verifying accurate labeling, troubleshooting equipment and staff education.
- Offer recommendations and solutions to the culinary team to improve daily operations.
- Assist in creation of standard operating procedures (SOPs) and training methods.
- Ensure all areas are set-up and broken down in accordance with SOPs and cleaned based on recommendations made by the Maintenance Team.
- Enforce and follows sanitation regulations and safety guidelines.
- Actively contributes to menu development which includes oversight of inventory and recommending purchasing needs.
- Assist in culinary staff selection, training and onboarding.
- Empower others to make decisions in areas within their span of control.
- Ensure employees follow assigned schedules, appropriate break times and follow accurate procedures for requesting time off.
- Hold others accountable, following performance management process. Discusses staff issues with the Executive Chef and Fueling Program Manager.
- Display and demonstrate excellent communication skills.
- Coach others to develop their culinary and professional skills.
- Ability to work nights, weekends and be flexible in scheduling per operational needs.
- The salary rate for this position is $41,292.
- Additional Compensation Details:
- Relocation is available within department guidelines. Additional Athletics benefits include: Athletic Event Tickets: Per Athletic Department Policy and NCAA regulations, Nike Elite Employee Benefit: Per Nike Elite Policy.
- Four years of work experience as a cook. Equivalent combination of education and experience may substitute.
- ServSafe certified within 6 months of hire.
- Possess a valid State of Colorado driver’s license.
- Knowledge of products/menus/recipes.
- Ability to plan, prepare and research recipes and ingredients.
- Knowledge of food safety and allergens.
- Ability to produce food providing accurate yield, authenticity and quality.
- Ability to work in a team oriented, fast-paced environment.
- Ability to review, assess and recommend operational efficiencies.
- Ability to direct the work of others to ensure smooth food delivery.
- Ability to conform to sanitation and safe food handling practices.
- One year of work experience as a sous chef.
- Experience in retail and high volume university dining.
