Supervises and oversees in a practical and hands on manner the meal production for your operation. Effectively manage the staff in the production of the meal period ensuring that the proper quantity and quality of food is prepared.

*Sets up service lines with food for meal and varies food production to ensure food is fresh and that the proper amount is prepared so that shortages or oversupply of food does not occur.
*Cleans, sweeps and mops work areas, including counters, floors, dishes and related equipment as needed during the day and after each shift to maintain an orderly kitchen.
*Supervises and oversees all phases of meal production and works with all kitchen personnel to ensure proper quality and quantity of food production and meal preparation in a timely manner that allows us to open our doors on time.
*Completes daily production sheets for every meal.
*Trains cooks and kitchen staff in proper food production technique and methods of cooking.
*Ensures the highest standards in sanitary kitchen procedures, food preparation and storage are maintained.
*Ensures that enough food is ordered, received, thawed and available for current and future meals.
*Ensures that food prep including vegetable back-ups are adequate for current and future meals.
*Ensures that food cooler and freezers are clean and organized and food is rotated, stored properly and used in a timely manner.
*Creatively use leftovers and extra food in a timely manner.
*Communicates effectively with fellow workers, supervisors, chef and receiver.
*Researches and tests “new” menu items for board plan.
*Ensures, where applicable, that Commons Meals are properly prepared and delivered or ready according to schedule.
*An important part of this job is the willingness and ability to shoulder the responsibility of the kitchen in the absence of the chef. This responsibility also extends to when the chef is in the building as a shared ownership of the kitchen.
*Will be required to work a varied schedule that supports the needs of the operation. This schedule may include week-ends, nights and swing shifts. Schedule will change during the year as Dining changes the kitchen teams for the summer and regular academic calendar.
*Performs other duties as assigned to assist the department in obtaining and maintaining its mission including assisting in the set-up, delivery and/or execution of catered functions or larger campus events.
Associate’s degree in Culinary Arts or equivalent experience required.
Knowledge, Skills and Abilities:
Must have knowledge of measurements and cooking techniques, proper safe food handling practices, and quality volume food production skills. Some knowledge of computers required.
3-5 years of prior experience preferred. Supervisory experience helpful. Must be Serve Safe certified or successfully pass the exam after hire date.
