Position Summary :

POSITION SUMMARY
Supports Culinary Arts operations by assuming 100% responsibility for the cleanliness of Culinary Arts facility, dishes, glassware, all kitchen cookware and utensils. Also responsible for maintaining all areas where proper sanitation and safety must be adhered to in order to comply with state and county health department safety and sanitation regulations, as well as ensuring sanitation and safety competencies are followed in accordance with programmatic accreditation and student learning initiatives. Works alongside student workers, providing direction and guidance as to proper sanitation and safety practices, safe operation of commercial dish machine and other equipment, safe handling of cleaning chemicals used, and upkeep of all storage and production areas.
ESSENTIAL JOB DUTIES ANDKEY RESPONSIBILITIES
1.Check in with the Chef instructor upon arrival to work and before leaving for the day.
2.Assume 100% responsibility for the cleanliness and storage of dishware.
3.Prepare the dishwasher for use following established protocol and sanitation procedures including opening and closing procedures and safety standards, maintaining the interior and exterior of machine.
4.Process dishes through the dishwasher maintaining a high level of sanitation.
5.Report any functional or operational problems to supervisor immediately.
6.Provide support to culinary instructors through demonstration of proper sanitation practices and reinforcing sanitation and safety educational lessons with culinary arts students.
7.Return clean dishes and cookware to appropriate locations throughout the kitchen and storage areas.
8.Follow established schedule to scour pots/pans, small wares, and flatware to maintain appearance.
9.Wash floor mats, clean floor drains, wipe down walls, tables, cooking surfaces, exhaust hoods, clean and sanitize all coal storage areas including all shelving, and clean sinks daily throughout the facility.
10.Maintain impeccably clean and sanitary dish room throughout the work day and at the end of shift.
11.Sweep and mop kitchen floors and dry and cold storage areas throughout the day; store cleaning items according to sanitation and safety requirements.
12.Carry all garbage and compostables out to dumpster and discard appropriately at the end of the shift; maintain cleanliness of trash and compost bins.
13.Oversee recycling and sustainability efforts by separating recyclables and compostable materials.
14.Adhere to daily storage area stock and inventory rotation and periodic daily upkeep schedules to ensure product is organized, maintained, properly rotated and inventory is properly accounted for.
15.Drain and clean deep fryers when necessary and transport fryer grease to recycle dumpster as needed.
16.Assume duties of bus person as necessary.
17.Work during special events outside of normal work hours as needed.
18.Provide excellent customer service by being friendly, helpful, and courteous, with positive attitude and initiative throughout the day.
19.Interact with students, faculty, and staff in a professional manner and work cooperatively with student workers in dish cleaning duties, cookware, and other sanitation duties.
20.Maintain time/temperature logs of cold storage areas.
21.Perform related duties as assigned.

Minimum Qualifications:

MINIMUM QUALIFICATIONS
1.High School diploma or GED equivalent.
2.Must possess or earn a ServeSafe food protection manager certification (offered through the Culinary Arts Program).
3.Suitable experience for the job and willingness to learn procedures.
4.Must be willing to work flexible hours, evenings and weekends.
5.Ability to move, carry, and/or lift up to 50 pounds, climb ladders, and work in tight spaces.
6.Ability to read and comprehend simple instructions, short correspondence and memos. Ability to write simple correspondence and to effectively present information in one-on-one and small group situations to supervisor, customers, clients, and other employees of the organization.
7.Must maintain a high degree of personal hygiene, appearance and cleanliness.
8.Ability to work independently with minimal supervision.

Preferred Qualifications:

1.Knowledge of sanitation practices and health department codes a plus.

They also contain information about crime statistics for the three previous years for all JJC campuses, property owned and controlled by JJC District 525 and on public property immediately adjacent to JJC campuses.

This information is required by law and is made available by the Joliet Junior College Police Department.
