We are seeking individuals to Join our Pack as a Fine Dining & Catering Line Cook (State Club & Lonnie Poole Terrace).

Successful candidates will work with the chef and co-workers in a high volume food service environment. Essential job duties include:

• Made to order and small batch cooking in a high volume food service environment while maintaining high quality standards.
• Follow standardized recipes to ensure food quality, appearance and taste.
• Perform specialty tasks such as display station set up and service, enhanced garnishing, recipe development, and event meal assistance.
• May work as a grill cook and cook to order menu items.
• Perform necessary cleaning of utensils, work space, tables, shelves, and equipment
• Transport cooked foods to hotboxes and may also help set up serving line.
• Supply/support front of the house operations with backup food to ensure no lag time between changing out food items.
• Maintain Grade A sanitation rating of 95% or better.
• Other duties as assigned to ensure NC State Dining business needs are met. Position may be asked to assist in other locations as necessary.
• May work as prep-cook and will follow lead cook directions. Includes preparation work of ingredients for recipes and production of food items according to the recipe.

NC State Dining provides campus-wide food service to students, staff, and faculty and the corporate partners on Centennial Campus. NC State Dining is a department within the Campus Enterprises Division, which is NC State’s Division for Retail and Hospitality Services — NC State Dining, NC State Stores, Trademark Licensing, Lonnie Poole Golf Course, NC State Student Centers (Witherspoon and Talley), Rave! Event Services and the Wolfpack One Card Services. Each unit shares a common goal: deliver quality and efficient services with dedicated financial support for student activity and scholarships.

Other Work/Responsibilities

• Be an ambassador for NC State Dining and the university as a whole and enrich the quality of life for the campus community and support student success.
• Work as a cohesive team member and play an integral part in creating a positive work environment.

Minimum Experience/Education

• High School Diploma or equivalency;
• Demonstrated possession of the competencies necessary to perform the work will also be considered.
• At least 1 year of experience in a cook or prep cook position or culinary education required.
• Experience with fine dining plate presentation.
• Short order and high volume location.
• Advanced display cooking skills required.
• Equipment knowledge, knife skill, measurements and knowledge of cooking methods and food safety

• Excellence in completing all tasks.
• Requires bending, twisting, pulling and pushing. Because of the nature of a food service operations and working in a kitchen, you must be able to work in extremely hot and cold conditions.
• Must be able to lift up to 60 lb with or without reasonable accommodation.
• Will routinely handle sharp items such as knives and slicer blades as well as be around hot food items, food pans, ovens, fryers, steam tables, grills.

Preferred Experience, Skills, Training/Education

• Two (2) years of progressive food service experience in catering, club, fine dining or casual dining
• Proficient knife cutting and meat fabrication skills
• Comprehensive understanding of cooking techniques
• Serf Safe certified
• Advanced display cooking skills
• Certificate of completion from a Culinary Education program or enrolled in such a program or has diverse culinary knowledge.
• Experience with plating and presentation in fine dining and or white linen catering preferred
• Recipe testing/development and recipe implementation preferred
• Sanitation Inspection experience.
