Assistant to the Cook during summer courses at Camp Slocum in Bahama NC
Position will run from May 9 to July 24 (minus May 28 holiday and July 5 week) (9 wks) Monday through Friday
Summer Camp Courses for Forestry and Fisheries Wildlife and Conservation Biology Students
Dates for students at Camp: Summer Camp May 12, 2019 to July 19, 2019 – minus the July 4 week

Other Work/Responsibilities

Essential Job Duties:
The summer camp program is an important part of the Forestry and Fisheries and Wildlife Curricula and serves to introduce students to many of the concepts and practical field skills, which they will use in later courses and in their professional careers. For many students the camp experience also is a time of significant personal growth.

Hours range from 4 to 5 am to 6:30 pm daily, on a two-way split shift position.
Must be flexible with changes in meal times.
Meals will be served as follows: Monday breakfast through Friday lunch.
Breakfast 6:30 a.m. – 7:00 a.m.
Lunch 11:30 a.m. – 12 noon
Dinner 5:30 p.m. – 6:00 p.m.

Kitchen Duties:
1.Meal Planning – Support Menu plan, order supplies. Provide a varied menu of nutritious home cooking – ability to take into consideration common allergies
2.Meal prepping and serving meals; some meals will be packaged ‘to-go’ for field trips
3.Plan for weekly guests of the program – family kickoff event May 12, faculty guests during courses and alumni event May 30
4.Oversee and prepare salad bar
5.Oversee kitchen and dining cleanliness – maintenance of industrial cooking equipment
6.Support the Cook in maintaining and ensuring all is up to code.

Cleaning Duties:
1.Support and assure students’ daily and weekly dishwashing and cleaning chores in the kitchen and mess hall.
2.Support and assure kitchen cleanliness – Cook’s Aide and Teaching Assistants share a schedule including student help for cleaning schedule.
3.Personal Cabin clean upon move out.

Deliveries
1.Support and manage receipt, organization and storage of food and supply deliveries.
2.When Teaching Assistants are available, supervise receiving and storing.

Room and board costs will be paid for by the Department if you are not local – accommodations provided – Private quarters and meals included. Rustic furnished cabin
Would have off May 27 (Memorial Day) and July 1-5 off.

Minimum Experience/Education

High School Diploma

Departmental Required Skills

Commercial Kitchen experience, knowledge of cleaning practices, good interpersonal skills, and communication skills
