Description

 An open position exists in TuftsDining reporting to the Chef Manager of Central Culinary and Unit Manager ofCentral Culinary Dining for a Sous Chef. This is a 40 hour per week 52 weekposition that will be responsible for working under the Unit Manager and ChefManager of Central Culinary in providing culinary excellence and leadership toan experienced food production team.

The Sous Chef is a culinaryprofessional that leads a skilled culinary team in a fast paced and high volumekitchens. S/He will demonstrate the ability to master top quality off-sitecatering cookery techniques including cook-chill technology, to develop and testrecipes for Central Culinary and to authentically prepare a wide variety ofinternational cuisines, and to work with an experienced culinary team servingTufts Central Culinary.



Qualifications

Basic rRquirements:

  • An Associate’s degree in culinaryarts or related field.
  • 5-7 years’ experience planning andpreparing hot and cold foods for service and coordinating the work of aculinary crew in a restaurant, hotel or institutional operation.
  • Expertise or high level of interestin various cuisines and cooking methods, quantity food preparation and batchcookery, and general culinary techniques and skills.
  • Demonstrated mastery of all cookingmethods.
  • Practical experience leading akitchen crew in a logical, efficient and fair manner, coaching and trainingculinary skills and techniques, designing plate and buffet presentations anddeveloping recipes and menus.
  • Comprehensive knowledge andunderstanding of kitchen sanitation and food safety practices and ability toenforce safe food handling guidelines.
  • A team player who is willing to beheld accountable for the quality of products produced by others, for meetingtight deadlines, and for contributing to the success of all kitchen and actionstation production. Must read, speak and understand English and have a workingknowledge of basic food service math.
  • Tufts Dining is ahospitality-oriented service provider, all employees are expected to becustomer service sensitive.

Preferred Qualifications:

  • Experience cooking for cateredevents especially in a university or institutional setting with a top tierprogram.
  • Experience utilizing computers forwork and the capability and willingness to learn the FoodPro software system.
  • Experience supervising the culinarywork of others.
