School/Center Overview

Residential & Hospitality Services (RHS) provides essential 24/7 services for the University of Pennsylvania, comprising student housing, residential and campus dining services, conference and event services, University Club operations, and services for those seeking off campus housing. RHS responsibilities include administering housing-related services to 11 College Houses and Sansom Place (graduate and undergraduate housing) across campus, working with other partners to provide students and guests with services that support living and learning in the University residences; and overseeing numerous food operations and dining services to ensure delivery of consistent, high-quality food to a diverse on-campus clientele through a wide variety of venues. http://cms.business-services.upenn.edu/hospitality-services/

Duties

The Cook I is responsible for assisting the Chef in the timely preparation and presentation of all food items by various methods of cooking and baking and in the provision of a quality food service to the clients of the University’s Dining Halls. This position assumes the Chef’s responsibilities in the absence of the Chef. Following standardized recipes and using batch cooking procedures, the Cook I records quantities produced, quantities unused, and recipe yields accurately and interfaces with the Chef concerning all facets of the day’s production. The position also assists the Chef in overseeing and training subordinates and in the implementation of all sanitation, safety, and quality assurance standards. The position is responsible for keeping the kitchen clean and orderly by implementing ‘clean as you go’ standards and insuring all work areas are clean and sanitized during and at the end of the work shift. The Cook I is also responsible for the utilization of leftover food with approval of the immediate supervisor and is responsible for the proper labeling, dating, covering, and storage of all leftover food and the cleanliness of the refrigerators in the areas. Ongoing training is mandatory and must be attended when offered.

Qualifications

A High School Diploma or GED is required and 2 years to 3 years of relevant experience or an equivalent combination of education and experience. Must be sanitation certified or willing to obtain certification within 90 day introductory period. Previous supervisory experience in a busy, large kitchen. Demonstrated experience in all aspects of food production including preparation and presentation, following standardized recipes, using batch cooking procedures and use/storage of leftover food. Experience implementing and training staff in sanitation, safety, and quality assurance standards. Ability to deputize for Chef as required. Willingness to attend ongoing training. Ability to lift up to 50lb. Ability and willingness to work schedule am/pm and weekend shifts as scheduled.
