Kitchen Manager/ Kitchen Steward
The Kitchen Manager position will ensure that the shift is run in a smooth manner with a focus on quality while attending to any unexpected issues that may arise.
The role is responsible for staffing, ordering, scheduling, financial goals and menu development --and will oversee all catering food orders.
Oversee all kitchen staff to oversee smooth running of the kitchen
Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices according to regulatory government standards
Regulate temperature of ovens, broilers, grills, and roasters
Ensure that all supplies are ordered, stocked, and properly stored. This includes all food items, dishes and utensils, cleaning products, cooking supplies, and any other item necessary for kitchen functioning
Remain up to date on new techniques and trends in dining so that they can continue to modify the menu to suit their customers
Keep track of kitchen expenses, reporting to owners what is spent and what is needed for the kitchen
Accurately tracked and report expenses incurred by the kitchen
Determine food and/or beverage costs
Make sure the kitchen is adequately staffed in all areas
Make sure employees receive the necessary training to ensure quality culinary dishes are produced
Assign duties to your staff, such as food preparation tasks, or assigned line positions
Responsible for hiring, training, developing and evaluating culinary staff
Ability to walk and/or stand frequently and for long periods of time
Knowledge of Labor Laws, Health Codes, Safe Food Handling and Sanitation, safety and security systems and procedures, and basic computer skills.
Knowledge of Foodtrak computer program
