Degree and Area of Specialization:

Preferred: An Associate's degree in Culinary Arts or Food Service Management or a Bachelors degree in a related field

Minimum number of years and type of relevant work experience:

Seven (7) or more years of related, culinary experience supporting large institutional food operations such as a university, intercollegiate athletic and/or professional sports or event venue is strongly preferred. Candidate should also hold or have the ability to obtain within six months a State of Wisconsin Restaurant Manager Certification.

The most qualified candidates will bring to this position the following knowledge, skills and abilities: Advanced culinary skills in a wide variety of food operations; Experience in developing and writing policies and procedures related to food and beverage preparation, production, distribution and event management; Excellent oral and written communications skills.

Experience in food preparation, production, portion control, presentation, and quantity and quality of products served; Experience in menu and meal planning for a wide variety of events.

Knowledge of food products, nutritional value, and balanced meal planning; Excellent management and organizational skills; Ability to work as a team with other members of the Food and Beverage staff; Knowledge of University Environment Health Code policies and State of Wisconsin food safety regulations; Experience in operation of kitchen equipment and familiarity with safety and sanitation standards; Experience in cost analysis, inventory control, and invoice recognition; Experience with Microsoft Office to include: Word, Excel, Outlook as well as food management computer programs; Experience in staff supervision, hiring and training methods, and work scheduling; Ability to evaluate the individual skills and capabilities of kitchen staff and place them in the appropriate position with in the kitchen; Excellent decision making and problem solving skills; Ability to lift up to 25 pounds when moving, storing or stocking and the ability to work a varied operations and event schedule to include nights, weekends, and holidays.

Position Summary:

Under the direction of the Food & Beverage Director for the Division of Intercollegiate Athletics, this position will supervise all food production areas for University of Wisconsin-Madison Athletics to include: Camp Randall Stadium, The Kohl Center, and the University Ridge Golf Course operations. The incumbent will serve as the culinary expert for food creativity and quality with an emphasis on an exceptional customer experience in all areas of operations. Main responsibilities to include developing menus, food and non-food item procurement, kitchen operations, food production and presentation, housekeeping and staff development. The Food and Beverage units of operation include: Team Meals, Catering, Premium Seating areas, University Ridge Club House, and the Badger Alley Bistro, a healthy and nutritionally based grab and go venue. In addition, this position oversees the supervision of both full-time and part-time staff to include temporary, and student staff sharing in the commitment of excellence in food service to our clients.

Conditions of Appointment: This is a 100%, renewable, Academic Staff appointment. Salary will be assigned within the appropriate range, commensurate with the candidate's qualifications and experience. An excellent benefits package is also included.
