Job Description

POSITION: Manager
DEPARTMENT: Restaurant Bar Nightclub
REPORTS TO: GM VP Ownership
TYPE: Salary Exempt: Negotiable and Based on Experience

POSITION SUMMARY
SKY Waikiki Managers will share the responsibility of overseeing venue operations, as well as be assigned the oversight of one or multiple departments within the venue. Responsibilities will be distributed or assigned based on skill set and experience. In addition, all managers are responsible for the oversight of inventory of food, beverage, service goods and supplies, and optimize profits and execute superior guest service to ensure guests are satisfied with their dining and entertainment experience.

SAFETY REQUIREMENTS
- Ability to work safely and prevent personal injury

- Comply with all safety and health department procedures as well as company andor departmental policiesprocedures
- Inform supervisor of any irregularities, guest complaints, employee complaints or other disputes, which cannot be readily resolved
- Conduct bi-monthly safety inspections to ensure safe working environment using the Internal Food and Safety Inspection List
- Comply with all state and federal liquor laws

ESSENTIAL FUNCTIONS OF THE POSITION INCLUDE, BUT ARE NOT LIMITED TO:
- The management of staff and monies, and guest satisfaction
- Delegate authority and assign responsibilities to floor supervisors and other employees
- Generate nightly reports in HotSchedules (Labor) and Avero (Financial)
- Recruiting, interviewing, hiring, training, and regular evaluations of personnel
- Timely and comprehensive inter-office communications and reporting to Ownership
- Executing and understanding opening and closing duties of the venue
- Building and maintaining vendor relations
- Respond to guest complaints
- Creating detailed and comprehensive systems to resolve issues and improve working conditions
- Adhere to all systems put in place by management for the essential operations of SKY Waikiki
- Nightly inspections of venue areas, for safety, cleanliness and appearance
- Completing tasks designated by GM, VP and Ownership in an efficient and timely manner
- Upholding SKY Waikiki policies and procedures at all times
- Continually strive to develop the staff, including floor supervisors, in all areas of managerial and professional development
- Assist with the recruitment and training of staff (train, develop, test, and coach staff accordingly with SKY Training material)
- Set work load expectations accurately and successfully
- Build and promote teamwork through proactive interaction
- Exhibit excellent follow up skills
- Utilize effective time management
- Accommodate and anticipate guests and staffing needs and ensure optimum customer service
- Ensure all service standards meet SKY Waikiki guidelines
- Ensure that all private, catering, and banquet events are properly executed
- Control cash and other receipts by adhering to cash handling policies and procedures
- Prepare all required paperwork, including forms, reports and schedules, in an organized and timely manner
- Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following SKY Waikiki Preventative Maintenance programs
- Ensure that all products are received in correct unit count and condition, and deliveries are performed in accordance with SKY Waikiki Inventory Receiving policies and procedures
- Assist and conduct conflict resolution, corrective actions andor terminations
- Oversee and ensure that employee performance appraisals are completed in a timely manner; Completion of Probation 90 days; 180 day review; Annual Review using company standard Performance Review Form
- Fully understand and comply with all federal, state, and county municipal regulations that pertain to health, safety and labor requirements of SKY Waikiki, employees and guests
- Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas
- Clearly understand and enforce company standards, procedures, rules and regulations
- Schedule labor as required by anticipated business activity while ensuring all positions are staffed when and as needed, and labor cost objectives are met; forecast business and staffing needs
- Schedule Labor every two weeks in Hotschedules
- Ensure dailyweekly, opening and closing side duties for all employees are completed
- Fill in where needed to ensure guest service standards and efficient operations, including opening and closing duties
- Provide administrative support
- Achieve company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of employees and creating a positive, productive working environment
- Work with preferred partners and organizations in promoting mutual company growth
- Conduct weekly inventories
- Assist with weekly updates of Recipe Costing Cards

IN ADDITION TO AFOREMENTIONED ESSENTIAL FUNCTIONS, THE FOLLOWING DUTIES AND RESPONSIBILITIES ARE ASSOCIATED WITH SPECIFIC AREAS OF EMPHASIS:

Beverage Manager:
- Oversee daily management of the bar staff
- Responsible for creating bartender and bar apprentice schedules
- Oversee training of all bartenders and bar apprentices
- Ensure service level of all bartenders and bar apprentices meets Ownership expectations
- Conduct weekly liquor, beer, wine, and consumables inventory
- Conduct monthly glassware Inventory
- Conduct monthly bar service equipment inventory
- Double check pricing invoices from vendors to ensure accurate pricing
- Send all invoices for liquor beer wine non-alcoholic orders to Accounting Department
- Compare LBWNA invoices to purchase log
- Ensure that proper liquor is ordered within SKY Waikiki approved product list
- Ensure that all pars on bars are correct and properly maintained
- Conduct dailyweekly pour tests to ensure Bar Team is using correct jiggers
- Maintain and organize all storage of LBWNA and consumables
- Conduct mid-shift bar audits (to be completed two times per week or more)
- Conduct nightly pre-shift meetings with department
- Maintain POS System (per SKY Waikiki Standard Operating Procedures)

Service Operations Manager:
- Oversee servers, server assistants, and food runners
- Responsible for creating position schedules
- Ensure service level of all staff meets Ownership expectations
- Oversee the training of all positions
- Create all check requests for entertainers
- Conduct weekly dry good inventory
- Conduct weekly service equipment inventory
- Maintain and organize all storage of service equipment
- Create purchase orders for service equipment
- Record and maintain weekly sales metrics of servers
- Conduct nightly pre-shift meetings with department

VIP Services, Promoter, Security, Facilities Manager:
- Coordinate with VIP services, promoter, security and facilities
- Oversee and maintain the proper physical upkeep of the venue
- Ensure service level of all staff meets Ownership expectations
- Responsible for all maintenance concerns
- Ensure all standard operating procedures are met with regards to the door hosts, VIP hosts, and security
- Ensure proper front door and retail cash-out procedures
- Conduct nightly inventory of radios, fire extinguishers, barricades, and surveillance equipment
- Maintain fire alarm systems, fire exits, and building evacuation plan and required posted signage
- Responsible for the first and last impression for guests and the guest experience
- Inspection and upkeep of perimeter of the venue
- Conduct nightly pre-shift meetings with department
- Conduct weekly inventory of all POS supplies
- Creates purchase orders for all POS supplies

VIP Member Services, HostessHost Manager:
- Primary Contact for all VIP Members
- Ensure timely and accurate fulfillment of benefits
- Arrange membership events and coordinate with staff
- Oversee and maintain high quality records of the Member Data base and revenue tracking
- Responsible for all development and maintenance of Membership program
- Serve as project manager for the production of membership information delivery and collateral material - including emails, e-news, newsletters, brochures and other publications and mailings
- Ensure all standard operating procedures are met with regards to Membership Services and Hostess Host department
- Oversee Hostess Host department
- Ensure service level is above guest's expectations
- Assist proper front door and retail cash-out procedures
- Conduct nightly pre-shift meetings with department
- Conduct weekly inventory of all POS supplies
- Creates purchase orders for all POS supplies

EDUCATION REQUIREMENTS
- Proof of eligibility to work in the United States
- College degree or equivalent is required
- 3-5 years of experience in hospitality, working in a high volume restaurantnightclub
- 21+ years of age
- Possession of, or ability to possess a valid Honolulu Liquor Commission Blue Card and ServSafe Certification

WORKING KNOWLEDGE REQUIREMENTS
